________________________________________ PREP TIME 20 Min COOK TIME 30 Min READY IN 50 Min SERVINGS for 8 (INGREDIENTS " 205 g margarine " 400 g sugar " 112 g dark chocolate (70% or above), melted and cooled " 10 ml vanilla extract " 5 eggs " 320 g self raising flour " 5 g baking powder " 6 g salt " 235 ml whole milk " 335 g chocolate chips " CAKE COVERING: " 150 g butter, softened " 640 g caster sugar " 85 g cocoa powder " 235 ml milk " 10 ml vanilla extract Method 1. In a large mixing bowl, cream margarine and sugar until light and fluffy. Add chocolate and vanilla; mix well. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to creamed mixture alternately with the whole milk. Fold in the chocolate chips. 2. Pour into three greased and floured 9-in. round cake pans. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. 3. For icing, in a large mixing bowl, cream butter until light and fluffy. Combine sugar and cocoa; add to creamed mixture alternately with milk. Add vanilla; beat well. Spread the cake covering between layers and over top and sides of cake.

 | Plum and Blueberry Upside Down Cake
This is such a pretty little cake. I recommend you use black plums as they will turn pink when baked and will look beautiful. The plums and blueberries can be replaced with peaches. You can also leave out the blueberries which makes a delicious plum cake! Hope you will enjoy making it as well as eating it.

INGREDIENTS " 155 g plain flour " 5 g baking powder " 2 g salt " 40 g margarine " 55 g brown sugar " 75 g margarine " 200 g white sugar " 1 egg " 5 ml vanilla extract " 180 ml milk " 4 black plums, pitted and thinly sliced " 110 g blueberries DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch cake pan. Combine the flour, baking powder and salt. Set aside. 2. In the prepared pan, combine 3 tablespoons margarine and brown sugar. Place pan inside the preheated oven until the margarine melts and begins to bubble. Set aside. In a large bowl, cream together the margarine and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. 3. Arrange plums around the edges of the prepared pan, overlapping slightly. Distribute the blueberries in the center. Pour batter into prepared pan, covering fruit completely. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool 15 minutes before serving.
